I really like a good breakfast casserole. I had spinach artichoke dip a few days ago and I kept thinking about it which lead me to create this casserole! It is a great way to use up leftover eggs and spinach. It honestly took me less then 10 minutes to make. This would be a great casserole if you had weekend company. If you are missing meat add a side of bacon or sausage , that’s what we did! Enjoy!

2 cups chopped spinach
1 cup marinated artichoke hearts
1/2 cup cottage cheese
1/4 cup Parmesan Cheese
1/4 cup mozzarella cheese
1/2 cup shredded cheddar cheese
3 tablespoons milk
In a bowl whisk eggs. Add in cottage cheese and milk. Season with salt and pepper and stir to combine. Stir in chopped spinach and artichoke hearts. Stir in mozzarella cheese, Parmesan and cheddar cheese. Pour egg mixture into baking dish. Bake at 350 degrees 30-40 minutes until cheese is bubbly and top golden.
