Spicy Peanut Butter Kimchi Noodles

My sister recently shared a recipe with me for spicy noodles with peanut butter and kimchi that her friend recommended to her (you can see that original recipe HERE). It was a simple 3 ingredient recipe that of course I had to jazz up with lots of extra flavors and ingredients. It took a lot of testing and tasting but it ended up being really delicious. I love the flavor the kimchi gave ithe noodles. They were full of so many different flavors- sweet, salty, spicy, garlic, ginger and a burst of citrus. We served ours with my favorite chicken lettuce wraps- you can see the recipe HERE. I think these are best room temperature or chilled! Enjoy and adapt to your taste!

1 package soba noodles

1 cup peanut butter

3/4 cup kim chee + extra liquid

juice of 2 limes

3 cloves garlic minced

2 tablespoon minced ginger

1 tablespoon hot sauce like sriracha

1 teaspoon sesame oil

2 tablespoons soy sauce

1 tablespoon rice wine vinegar

optional – cucumber and sesame seeds for topping

Cook soba noodles according to the package and drain and rinse.

In a food processor combine the peanut butter, kimchi, garlic, ginger, lime juice, soy sauce, hot sauce, rice wine vinegar, sesame oil. Add a little of the kimchi liquid if sauce seems too thick. Taste and season as needed per your palette. Toss the noodles with the sauce- it makes a lot so you may have extra but we love sauce. I topped ours with fresh chopped cucumbers and sesame seeds. Would also be great with green onions and cilantro.
