Falafel Chickpea Salad with Sriracha Tahini Dressing

This salad could not be easier to whip together and the flavors are legit. I use store bought crunchy chickpeas and dressing to save time. I always buy pickled onions from Whole Foods salad bar to have on hand for salads but you could easily make your own. If you want to make this ahead of time just add the avocado and dressing right before serving. Enjoy!

1 head kale shredded

pickled onions

cherry tomatoes cut in half

2 baby cucumbers sliced

1 avocado sliced

feta cheese

Saffron Road Crunchy Chick Peas (see photo)

Siriacha Tahini Dressing

Assemble all ingredients in a bowl and drizzle with dressing.
