Healthy Artichoke Dip

I made this dip for the super bowl and it was a huge hit. It is super easy to make, only a few ingredients and so yummy. It is made with Greek Yogurt instead of mayo so you don’t have to feel bad about eating it. You can serve it with pita chips and fresh veggies. Enjoy!

H E A L T H Y A R T I C H O K E D I P

1 large container Plain Greek Yogurt

1 lemon juiced

14.5 oz jar marinated artichokes hearts chopped (save the liquid)

3/4 cup shredded Parmesan cheese

salt and pepper

2 tablespoons chopped Parsley

Pita Chips, Naan bread, fresh veggies for dipping (also great with Terra Root Veggie chips)

Mix the Greek Yogurt, lemon juice, and several splashes of the artichoke marinate and salt and pepper. Add in chopped artichokes, Parmesan Cheese, and parsley. Taste and season as needed.
