After posting my Pimento cheese on instastories I had lots of requests to share the recipe. I love homemade pimento cheese. The key is grating your own cheese don’t buy the pre shredded kind. Also buy good quality cheese for sharp cheddar I like Cracker Barrel or Cabot. This will save for a week or two in the fridge! Makes for a great app or try it toasted on bread! Enjoy!

1 block sharp cheddar cheese grated
1 block pepper jack cheese grated
1 4oz jar pimentos drained
1 small can diced green chilies drained
4-5 green onions sliced thinly
1 tablespoon hot sauce (I use Texas Pete)
1/2 cup mayo- add more as less as needed
salt and pepper
Mix all together in a bowl. Taste and add more hot sauce, mayo, salt and pepper as needed.
Meet my new dress obsession. It is light and airy and under $30. This is gem I found on Amazon a year ago but now it is out in so many fabulous new color options.
