I post and share a lot of what I am cooking and we what we eat on my instastories. I thought I would do a post here with some recents meals that I have loved and we eat on repeat! If it is a recipe I have made before just click on the name and it will take you to the recipe.
I had this salad for dinner last night and it may be a new favorite.
Arugula + blue cheese + shaved fennel + rotisserie chicken tossed with EBB seasoning + roasted sweet potatoes + avocado + cucumber. Toss all together with Tessamae’s Balsamic Honey Vinaigrette.
Tuscan Chicken Cakes + Trader Joe’s English Peas + Arugula
Taco Salad – I eat this once a week because the kid’s love taco night
Taco Meat + Refried Black beans + shredded lettuce + pico + avocado + plantains + sharp white cheddar cheese
Tomato Pie + Roasted Broccoli
Salmon Cakes + Zucchini and Squash with basil pesto + Roasted Asparagus
Roasted Salmon + Sweet Potato White Bean Salad
2 GG Crackers with mashed avocado and EBB seasoning + arugula with radishes tossed with olive oil and lemon juice + Chicken Gouda Sausages + fried egg
Couscous Salad – I make several variations of this any veggies you have on hand work great.
Israeli couscous + cherry tomatoes + orange bell pepper + red onion + cucumber + feta + radishes + arugula. Toss all together with Tessamae’s Green Goddess Dressing.
Chopped Salad– Kale + cherry tomatoes + cucumber + chickpeas + hearts of palm + salami + green olives + feta + radishes
Dr Praeger’s green Veggie burgers topped with marinated goat cheese + roasted sweet potatoes, cherry tomatoes and broccolini. All topped with Trader Joe’s Green Goddess Dressing.
2 GG crackers topped with scrambled eggs with zucchini and squash + pico and 1 Morning Star Veggie Sausage
Corn Salad + Mini Cheeseburgers
