Amped Up Caprese Salad + 5 Black One Pieces Under $100

It is no secret round here I love a salad.  I think if and when I write my cookbook it may just be be all salad recipes:)  Caprese salad is one of my all time favorites.  Now is such a great time to make Caprese salads with all the ripe and fresh tomatoes from the Farmer’s Market.  The addition of avocado in this salad takes it to a whole new level.  My mom suggested adding the avocado when I was home a few weeks ago and it was awesome!  This will be your new favorite way to serve it.  We used a Fig balsamic glaze which I thought at first seemed weird but it was so good.  You can always just use a regular balsamic glaze or balsamic vinegar if you can’t find the fig one.  You can order the fig glaze HERE on Amazon,  if your local store doesn’t carry it.  This is the perfect light and fresh salad for Summer!

U L T I M A T E   C A P R E S E  S A L A D

2-3 Heirloom tomatoes sliced (I like to buy the yellow and red ones)

1 avocado sliced

1 ball mozzarella cheese, sliced

1 bunch fresh basil torn into pieces

olive oil

fig balsamic glaze

Start with tomatoes and layer salad- tomatoes, mozarella, basil, and avocado.  Sprinkle with salt and pepper.  Drizzle with olive oil and the fig balsamic glaze.

    Oh my goodness – a Fig Balsamic Glaze?! How have I not had this in my life yet. This is the perfect summer salad – although all of your salads are always delicious!
